Cutting boards and knives are two of the most-used tools in the kitchen, which means they require consistent care. Whether you are slicing tomatoes, cutting fruit, chopping herbs, trimming vegetables, or preparing proteins, clean tools help protect both flavor and food safety.

The first rule is separation. If possible, use different cutting boards for raw meat, seafood, poultry, produce, and bread. This reduces the risk of cross-contamination. If you only have one board, wash and sanitize it thoroughly between different ingredient types, especially after raw proteins.

Lemon and salt can help refresh wooden boards. Sprinkle coarse salt over the board, rub with half a lemon, then rinse and dry well. This method is helpful for odor control and surface freshness, especially after cutting onions, garlic, herbs, or fruit. It is a simple maintenance step that keeps boards feeling clean and pleasant.

Knives should be washed by hand whenever possible. Dishwashers can dull blades and damage handles over time. Use warm, soapy water and wipe carefully from the spine of the knife toward the edge, keeping fingers away from the blade. Dry immediately to prevent water spots, rust, or handle damage.

Storage also supports safety. Store knives in a knife block, magnetic strip, drawer insert, or protective sheath so blades stay sharp and hands stay safe. Store cutting boards upright in a dry area rather than stacked while damp. A clean, organized storage routine helps tools stay ready for the next meal.

During summer, pay extra attention when preparing raw proteins, dairy-based dips, cut fruit, and salads. Clean boards and knives before moving between these foods, and avoid leaving prepared ingredients out in warm temperatures for too long. Good hygiene keeps summer meals fresh, safe, and enjoyable.
